BLACKBERRY & BLUEBERRY HAND PIES RECIPE
makes 6
INGREDIENTS
For the pies
- 6oz. blackberry
- 6oz. blueberries
- 1/2 lime (zested & juiced)
- 3 tbsp granulated sugar
- 2-3 tbsp milk
- 1 pie crust (store bought or homemade)
- large cookie cutter (I used a heart)
For the glaze
- 1 cup powdered sugar
- 2-3 tbsp milk
- tiny drop of red food coloring & sprinkles (optional)
*you can also use a bit of the jam to tint the glaze a beautiful purple.
DIRECTIONS
For the pies
- Preheat oven 450°F
- In a small sauce pan, cook the berries with the lime juice, zest & sugar, stirring occasionally until thickened (jam like texture), making sure to smush the berries.
- Set aside to cool while you prepare the crust.
- Roll out pie dough ~1-2cm thin.
- Cut out 12 hearts (or other shape).
- Place ~1-2 tbsps of jam onto the center & spread upwards for the tops of the heart, leaving a border of crust around the jam.
- Brush the border with milk.
- Put the other cutouts on top, and using a fork, press the edges together.
- Brush the top with milk & bake for 10-12 mins.
- Let the hand pies cool before glazing or else the glaze will thin out.
For the glaze
- Combine the powdered sugar & 1 tbsp. milk.
- Mix till combined, adding a tiny bit of milk at a time till desired consistency.
- Frost pies with glaze & sprinkles.
