BAKED DONUTS RECIPE  adapted from King Arthur Flour

makes 24 regular sized donuts


INGREDIENTS


for the donuts

  • 1/4 cup (4 tablespoons) butter
  • 1/4 cup vegetable oil
  • 1/2 cup granulated sugar
  • 1/3 cup brown sugar
  • 2 large eggs
  • 1 1/2 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1/4 tsp. ground cinnamon
  • 3/4 tsp. ground nutmeg
  • 3/4 tsp. salt
  • 1 tsp. vanilla extract
  • 2 2/3 cups all purpose flour
  • 1 cup buttermilk or whole milk

for the orange mint glaze 

  • 2 cups powdered sugar
  • 1 fresh orange (juiced)
  • 2 sprigs of fresh mint (washed & chopped finely)

for the strawberry glaze 

  • 1 1/2 cups powdered sugar
  • 1/3 cup freeze dried strawberries (crushed finely)
  • 2-3 tbsp of milk (or more for a thinner consistency

for the chocolate glaze

  • 3/4 cup chocolate of your choice
  • 3 tbsp. unsalted butter
  • 1 tbsp. honey
  • dash of vanilla extract

for powdered sugar dust

  • 2 cups of powdered sugar


DIRECTIONS


for the donuts 

  • Preheat oven to 425°F & prepare donut pans (butter and lightly flour -tapping off excess flour).
  • In a medium bow, beat together butter, oil, and both sugars.
  • Add eggs one at a time, beating to incorporate.
  • In a separate bowl, whisk the flour, salt, spice, baking powder & soda.
  • In another bowl, mix the vanilla extract and milk.
  • Add the flour mixture to the butter and sugar mixture, alternating with the milk & ending with the flour.
  • Fill a pipping bag (or a ziploc bag with the tip cut off) with the donut dough.
  • Pipe the dough into prepared pans ~1/4 the way up.
  • Bake for 10mins.
  • Let cool for 5mins before flipping and transferring to a wire rack to cool completely before icing.

for the orange mint glaze

  • Mix the powdered sugar & mint in a bowl.
  • Add the orange juice 1tbsp. at a time till desired consistency.
  • Dip the donuts into the glaze and with a swirly motion, pull them out & tilt them to let the excess drip off.
  • Place on wire rack to drip as you finish the rest.
  •  Add extra mint leaves on top for decoration (optional).

for the strawberry glaze

  • Mix powdered sugar & freeze dried strawberries into a bowl.
  • Add milk 1 tbsp. at a time till desired consistency.

for the chocolate glaze 

  • Melt chocolate in the microwave in 15 second intervals, stirring in between till melted.
  • Add honey, vanilla extract & butter, stirring till combined.
  • Microwave for 15 secs again if clumpy.

for powdered sugar dusted 

  • Place powdered sugar into a large ziploc bag.
  • Toss freshly made (warm) donuts in and coat.
  • Tap off excess in bag before taking out.
