Hi hi. Happy Friday my sweet friends. I have another donut recipe for you today. Remember that cake that I made a couple weeks back that had those naturally gorgeous dyed pears? I used butterfly pea powder from Suncore Foods & fell so in love with it, I had to try out their beetroot powder. The first baked good that came to mind was red velvet cake, and to be quite honest, I was planning on making cupcakes. But then donuts just seemed like a better idea. Who doesn’t like grabbing a little donut or two in the morning to go with their cup of joe. The almond flour in this changes everything (in a good way), and this is also the first baked recipe I’ve done without using an egg! Other ingredients can be swapped out to be made vegan as well, which is a HUGE PLUS. Then to top it all off, it is NATURALLY DYED! I hope you guys enjoy them, they are neighbor & boyfriend approved!
BEETROOT POWDER RED VELVET DONUTS
INGREDIENTS
for the donuts
- 1 cup buttermilk (or almond milk)
- 1 tbsp. apple cider vinegar
- 3/4 cup granulated sugar (or 1/2 cup maple syrup)
- 1 tsp. vanilla extract
- 1/4 tsp. salt
- 1 1/4 cup almond flour
- 1 1/4 cup AP flour (or vegan blend of flour)
- 3 tsp. baking powder
- 1/4 tsp. baking soda
- 1 tbsp. cocoa powder
- 2 tbsp. Suncore Foods beet root powder
for the cream cheese drizzle
- 2oz. cream cheese (room temp)
- 3 tbsp. unsalted butter (room temp)
- 1/2 tsp. vanilla extract
- 1/4 cup powdered sugar
DIRECTIONS
for the donuts
- Preheat oven to 350°F.
- In a medium bowl, combine buttermilk, vinegar, sugar & vanilla extract and beat on low till frothy.
- Sift in all dry ingredients and beat till combined.
- Pour batter into an icing bag (or ziploc bag if you don’t have those) & snip the tip.
- Pipe halfway into donut tray & bake for 15 mins till slightly puffed.
- Cool in the pan for 5 mins & transfer to a wire rack while you prepare the drizzle.
for the cream cheese drizzle
- Beat together the cream cheese and butter.
- Add vanilla extract & beat till combined.
- Beat in the powdered sugar till there are no more lumps.
- Microwave for 15-20 secs & stir till smooth.
- Spoon into a small ziploc baggie (or use a spoon) and drizzle over the donuts.

It made 12. I used the granulated sugar. The family likes them. Definitely will make again! Thanks!
