Orange Mint Baked Donuts & More

If you guys follow me on Instagram, you know that I was planning on sharing these donuts last week. I ended not sharing them because I left my laptop over at my boyfriend’s, but really I also wanted to share these other glazes for this donut base as well. In case you’ve been living under a rock and haven’t noticed, (no worries I’ll get you caught up) I’ve gone a little crazy making donuts the past couple of weeks. I’ve tried to make fried donuts before with little success, plus I have this weird thing about the deep fried oil coating my mouth from eating freshly fried foods, so I tend to stay away from them (that doesn’t mean I won’t attempt them again sometime soon).

Any-who, I have more pans than I have space for, but I just couldn’t hold back anymore and got myself a donut pan. I decided to take my shot at these baked donuts since it sounded so simple and honestly I was craving donuts, okay, don’t judge. I ended up going overboard with all the flavor combos with this donut base, but I landed on something so, so, so, so amazingly delicious that I had to share it with you all… baked orange mint glazed donuts. Sounds a little weird right? BUT it’s sooo freakin’ good guys. It’s like a mint lemonade with an orange twist/tang to it, and if my boyfriend was writing this, he’d probably say they were super “refreshing” donuts haha. The recipe for these are right down there, so roll up your sleeves, tie up your hair, and get baking! OOOHH and the other glazes are yummy too, but my fav is def the orange mint 😉

BAKED DONUTS RECIPE  adapted from king arthur flour

INGREDIENTS

for the donuts -adapted from king arthur flour

  • 1/4 cup (4 tablespoons) butter
  • 1/4 cup vegetable oil
  • 1/2 cup granulated sugar
  • 1/3 cup brown sugar
  • 2 large eggs
  • 1 1/2 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1/4 tsp. ground cinnamon
  • 3/4 tsp. ground nutmeg
  • 3/4 tsp. salt
  • 1 tsp. vanilla extract
  • 2 2/3 cups all purpose flour
  • 1 cup buttermilk or whole milk

for the orange mint glaze 

  • 2 cups powdered sugar
  • 1 fresh orange (juiced)
  • 2 sprigs of fresh mint (washed & chopped finely)

*more mint for decoration

for the strawberry glaze 

  • 1 1/2 cups powdered sugar
  • 1/3 cup freeze dried strawberries (crushed finely)
  • 2-3 tbsp of milk (or more for a thinner consistency

*strawberries (halved) for decoration

for the chocolate glaze

  • 3/4 cup chocolate of your choice
  • 3 tbsp. unsalted butter
  • 1 tbsp. honey
  • dash of vanilla extract

*chocolate sprinkles for decoration

for powdered sugar dusted 

  • 2 cups of powdered sugar

DIRECTIONS

for the donuts 

  • Preheat oven to 425°F & prepare donut pans (butter and lightly flour -tapping off excess flour).
  • In a medium bow, beat together butter, oil, and both sugars.
  • Add eggs one at a time, beating to incorporate.
  • In a separate bowl, whisk the flour, salt, spice, baking powder & soda.
  • In another bowl, mix the vanilla extract and milk.
  • Add the flour mixture to the butter and sugar mixture, alternating with the milk  & ending with the flour.
  • Fill a pipping bag (or a ziploc bag with the tip cut off) with the donut dough.
  • Pipe the dough into prepared pans ~1/4 the way up.
  • Bake for 10mins.
  • Let cool for 5mins before flipping and transferring to a wire rack to cool completely before icing.

for the orange mint glaze

  • Mix the powdered sugar & mint in a bowl.
  • Add the orange juice 1tbsp. at a time till desired consistency.
  • Dip the donuts into the glaze and with a swirly motion, pull them out & tilt them to let the excess drip off.
  • Place on wire rack to drip as you finish the rest.
  •  Add extra mint leaves on top for decoration (optional).

for the strawberry glaze

  • Mix powdered sugar & freeze dried strawberries into a bowl.
  • Add milk 1 tbsp. at a time till desired consistency.

for the chocolate glaze 

  • Melt chocolate in the microwave in 15 second intervals, stirring in between till melted.
  • Add honey, vanilla extract & butter, stirring till combined.
  • Microwave for 15 secs again if clumpy.

for powdered sugar dusted 

  • Place powdered sugar into a large ziploc bag.
  • Toss freshly made (warm) donuts in and coat.
  • Tap off excess in bag before taking out.
