Mini Blackberry & Blueberry Pies

January passed by in a blink of an eye. From helping my boyfriend move into his new apartment to getting bad news about my grandma’s cancer…all while dealing with the sensations of starting antidepressants for my anxiety & depression. And yes, you read that right, I went down yet another dark hole. This would be the third month since I’ve started medication, and no one really tells you how to cope with it. BUT I am still here and still enjoying what life has to offer, so it can’t be that horrible right? Well, I’ll save all that sad soppy stuff for a later post and tell you all about it. Let’s get on with it and get to the mini pies! Or shall I say ELEVATED poptarts 😉  I’m finally feeling like my routines are settling back in and I’m able to explore in the kitchen once again! I really really really enjoy these. Plus they’d be great for Valentine’s Day as a snack or dessert. 💕 Honestly they are so simple to make, I used a store bought pie crust to make it even more simple. Even my dog (Lulu) wanted some!… check out the last two pictures of her peeping at them & getting I N T E R C E P T E D hahahaha. MINI BLACKBERRY & BLUEBERRY PIE RECIPE

INGREDIENTS

For the pies 

  • 6oz. blackberry
  • 6oz. blueberries
  • 1/2 lime (zested & juiced)
  • 3 tbsp granulated sugar
  • 2-3 tbsp milk
  • 1 pie crust (store bought or homemade)
  • large cookie cutter (I used a heart)

For the glaze 

  • 1 cup powdered sugar
  • 2-3 tbsp milk
  • tiny drop of red food coloring & sprinkles (optional)

*you can also use a bit of the jam to tint the glaze a beautiful purple.

DIRECTIONS

For the pies 

  • Preheat oven 450°
  • In a small sauce pan, cook the berries with the lime juice, zest & sugar, stirring occasionally until thickened (jam like texture).

*make sure to smush the berries!

  • Set aside to cool while you prepare the “crust”.
  • Roll out pie dough ~1-2cm thin.
  • Cut out 12 hearts (or other shape).
  • Place ~1-2 tbsps of jam onto the center & spread upwards for the tops of the heart, leaving a border of crust around the jam.
  • Brush the border with milk.
  • Put the other cutouts on top, and using a fork, press the edges together.
  • Brush the top with milk & bake for 10-12 mins.

For the glaze 

  • Combine the powdered sugar & 1 tbsp. milk.
  • Mix till combined, adding a tiny bit of milk at a time till desired consistency.
  • Frost pies with glaze & sprinkles.
