Easy Peasy Carrot Cake

With mother’s day coming up, why not whip up this easy carrot cake! What I love about this recipe is that most of the ingredients are found right in your pantry. I’ve made this carrot cake quite a few times before and everyone always devours it. It is flavorful and moist, with not too much going on. You can pair it with a simple cream cheese frosting (in case there are any nut allergens), or spice it up like I do with some roasted walnuts for that extra crunch.



  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 2 tsp baking soda
  • 2 tsp ground cinnamon (or 1 tsp nutmeg & cinnamon)
  • 1 tsp salt


  • 4 eggs
  • 1 1/2 cups vegetable oil
  • 3 cups grated carrots (about 5 medium sized carrots)


  • Preheat oven to 350°F
  • Butter and flour two 9in pans
  • Whisk all dry ingredients in a big bowl
  • Add eggs and oil and mix throughly with whisk or hand mixer
  • Fold in grated carrots
  • Pour into pans and bake for ~40 mins (check with a toothpick!)
  • Let it cool in the pan for ~5 mins then switch over to a rack to cool completely before frosting



  • 8oz cream cheese (1 block)
  • 4tbsp unsalted butter at room temperature (1/2 stick)
  • 1 cup confectioners sugar (powdered sugar)
  • 1 tsp vanilla extract
  • 1 tbsp milk
  • 1 cup roasted walnuts chopped


  • Beat butter and cream cheese together till fluffy
  • Add vanilla extract & milk and continue to mix
  • Slowly add in sugar and beat till it’s all incorporated (may add more if desired)
  • Gently fold in walnuts and frost cake


Frosting the first layer with sweet creamy nutty goodness!

  1. Carrot cake is so versatile. I love how you can basically dress it up however you like and add things to it. I love adding walnuts to it, and some buttercream frosting. So yeah, your recipe is right up my alley haha. Delicious!
